![]() We thoughtfully direct the farming at theses vineyard sites to ensure the consistent quality of the Austin Hope Cabernet. These special vineyard sites provide not only the right soil types and structure, but the right micro climate of warm days, cooling afternoon winds and cool nights. Both are on the edges of ancient river beds where rocks wore down and mixed with the alluvial soils from the nearby hills. Some of our favorite vineyards are located within the Creston District and the Estrella District. We find that a good combination of broken-down calcareous stones, disintegrated bedrock and gravel combined with loamy soils make magic! Our region is well-known for its calcareous and limestone soils. What you may find surprising is that east of the Salinas River, atop ancient flood plains and sea beds, is where we find the soils that drive the wine quality. We seek out the vineyards from all over the Paso Robles AVA that best define Paso’s Cabernet Sauvignon. After an additional 6 months of ageing in 100% new French Oak, the wine was then bottled in late spring of 2021.Īustin and his team know just how unique each part of Paso Robles can be. Just before bottling the 2019 Austin Hope Cabernet, the winemaking team tasted and selected individual barrels that displayed exceptional quality and character. The Rava’s, a third-generation farming family, has taken their expertise into the cellar crafting sparkling wines in the traditional méthode champenoise style. In fall of 2020, the lots were blended together and continued barrel aging in 75% new French Oak. Located in the El Pomar AVA in the heart of Paso Robles Wine Country, Rava Wines + Events is the place for celebrations and live entertainment. These lots are constantly supervised, tasted & analyzed for tannin and anthocyanins in order to determine optimal length of extended maceration after fermentation. The making of Austin Hope Reserve Cabernet begins with small lot fermentations separated by individual vineyard blocks which receive daily pump-overs for maximum extraction. Through our extended Barrel aging process, this wine has developed unprecedented structure and character. But you can find many other varietals including Zinfandel, Rose, Chardonnay, Cabernet, and Pinot Noir. The area is highly regarded for a wide variety of wines, especially it's "GSM" varieties, a blend of Grenache, Syrah and Montverde grapes. It's one of the state's fastest growing regions and has become known for some excellent wines at affordable prices and for the great hospitality from the locally-owned wineries. Paso Robles is an exciting and diverse wine region located halfway between Los Angeles and San Francisco in the heart of the Central Coast region of California. I've made an effort to avoid those wineries owned by multi-national corporations and to focus on family-owned wineries. I selected the wineries based on personal visits, reviewing wine lists of local fine restaurants, and reviews from experts.
